Sheet Pan Recipes in 35 Minutes or Less for Busy Athletes

 

If you’re like me, you’re always looking for new recipes that are quick, nutrient packed, and delicious!

Sheet pan dinners are great options for a few reasons:

  • Most contain protein & veggies (& sometimes carbohydrates, too!), making it easy to create a complete meal

  • Minimal clean up since the cooking all happens on one sheet pan

  • Cooking time is only ~20 minutes

  • Taste great as leftovers!

Since I know that meal time can get hectic, here are some tips to make sheet pan meal prep even less stressful:

  • Chop vegetables ahead of time. Most sheet pan meals include vegetables and potatoes. The most time consuming part of preparation is the chopping! Save time in the evening by chopping ahead of time. You could chop during a break earlier in the day or when you unpack your groceries from the store.

  • Keep your fridge stocked with salad greens + toppings. While most sheet meals have vegetables, some don’t or are light on the veggies (tip: your plate should be 1/3-1/2 veggies). Keep it simple by filling a bowl with salad greens and toppings (like feta, sliced almonds, + dried cranberries) to complete your meal.

  • Make a large batch of grains to use throughout the week. For sheet pan dinners that don’t have carbohydrates (or if you need to boost the amount of carbohydrates on a heavy training day), you can serve them with quinoa, couscous, rice, or the grain of your choice. Making a large batch on the weekend can save time later in the week. Cooked grains keep in the fridge for 3-4 days, and they can also be frozen in microwave safe containers. Just thaw in the fridge overnight and they’ll be ready to use!
